I am seriously on a HUGE soup kick lately! I don’t know what it is but I am really enjoying coming up with new soup recipes and of course devouring bowls full as well! This Slow Cooker Creamy Tomato Basil Soup with Tortellini really hit the spot tonight! Hello Monday! Hope you all had a great weekend! We had quite the chilly Sunday here in Jersey… like sweatshirts, fire pits and a comforting bowl of Kale & Cannellini Bean Soup chilly! This soup couldn’t be any easier to make and the flavors are just wonderful! This makes for a perfect healthy weeknight meal that will please the whole family! Before you think I’m crazy for making soup in the summer, know this… We’ve had an incredibly mild summer here in NJ. Heck today is August 19th and the ac is off and the windows are open, that never ever happens!! This soup requires a short list of ingredients and the result is amazing! Taking the extra step to roast the squash is so worth it, the natural sugars develop and the flavor that develops is out of this world! The apples, onions and garlic are slowly sautéed with cinnamon, thyme, fresh nutmeg and a touch of sugar. Once all the flavors have melded they are blended to silky perfection and finished off with the oh so delectable marscapone cheese!
