School lunches are all new to me! Today was my big guy, Jacks first day of full day kindergarten. Let me tell ya, it was a rough morning but thank God that once he calmed down he had a great day at school. I am praying that tomorrow is a little easier on him now that he knows what to expect. Keep those fingers crossed for me friends! On a happier note, he really enjoyed his lunch and I really enjoyed sticking these awesome personalized school labels from Kidecals all over his things! Hope you all have a wonderful day planned and enjoy the official summer kick off weekend! I’ve got a super simple meal for you this Memorial Day Monday. Threw this Avocado, Tomato & Mozzarella Grilled Cheese together for lunch one day last week. Its quick, easy and so yummy! I have a slight obsession with avocados and I’m pretty sure I eat way too many weeks but I could do worse! This is a simple grilled cheese using a multi grain english muffin, juicy tomatoes, wonderful fresh mozzarella and creamy avocados.

I don’t know if you can really go wrong with grilled cheese. This one is definitely a few notches up from your kids american cheese grilled cheese. The flavor of Brie is so wonderful, it is rich, creamy and melts wonderfully! This Brie, Pear & Turkey Bacon Grilled Cheese is really delicious! The perfectly melted creamy brie, the sweetness of the pear and the salty bite from the turkey bacon… its a wonderful combination! For the bread, I found a multi grain flatbread that I wanted to give a try… love it!!! This is such an awesome quick, go to meal with a bit of sophistication about it!

BBQ Turkey Sloppy Joes

Me and the boys had a very busy morning with a fun play date with lots of friends!! The kids had a blast and its always awesome to watch little ones interact, they crack me up!!! Then it was out to meet the hubs and brother for some pizza. Tonight is zumba too, so a quick and easy dinner is exactly what I needed!!
serves 4-5
salt and pepper
In a large saute pan, over medium heat, add a few drizzles of olive oil, the onion, pepper and celery. Season lightly with salt and pepper. Cook until slightly softened and lightly golden.
Add in the ground turkey. Using a spoon or potato masher, break up the meat as it cooks. Once the meat is cooked most of the way through go ahead and add in the bbq sauce. Lower the heat and allow to simmer for 10 minutes so the flavors have a chance to meld.
I served mine with a toasted whole grain sandwich flat.
