I am not the hugest fan of breakfast as a meal but I am well aware that it is super important to eat a good one and start your day off right! I’m a little bit of a nut and I’m currently doing a cleanse and that means clean eating all the way. Over the weekend I made a batch of these Sweet & Savory Pork Breakfast Bites to have on hand for the week. I have been dying to attempt to make Arepas for a long time! I saw them on a cooking show a while back and thought now those seem easy enough and delicious!!!! Whats an arepa? Precooked corn meal, water, salt and shredded Mexican cheese formed into a patty then browned on each side. To build this amazing Mexican style sandwich, I made an incredible pulled pork with a roasted chili sauce. To go along with it, and machete extra messy, some guacamole and diced red onion. Do you have a dish from your childhood that you just loved and was sort of a treat when you got it? This dish was a typical frozen dinner that me and my brothers got all excited about when we were allowed to have it. Now, lets just say, I really don’t even want to know what was in there and boy am I glad to never give my kids those things {granted it makes me smile to see that there are organic options out there}. So how was everyones weekend? I had such a great weekend celebrating Mothers Day with the hubby and our boys. Saturday started with breakfast at my new favorite place, The Buttered Biscuit in Bradley Beach…seriously if you are even sorta nearby, you must try this place out! After that we spent some time at the arcade with the family followed by an incredible dinner at Porta in Asbury Park. Thats another one that if you haven’t gone yet, its a must! Hey hey its the weekend!!! What a run around week its been here and I am so ready to slow things down a bit for a couple days! Whats on the menu for today? Swedish Meatballs {lightened up} my way. This may sound crazy and all but I’ve been to Ikea but never had Swedish Meatballs {wink wink} but it was one of their commercials that made me think to try making them! Traditionally they are made with a combination of beef and pork but I lightened it up using chicken and pork instead. I also switched out the beef broth, replacing it with chicken broth and rather then finishing with heavy cream, I used light sour cream. …
The past couple days here in NJ have been really lovely, today not at all! It is freezing and windy here but thankfully its going to warm up again over the next couple days. We have had such a brutal winter this year and I am beyond ready for the warmth of the sun, hitting up the park with the boys, picnics and the beach! With the warmth in mind I wanted to make a dinner that had deliciously bright flavors! Pork Milanese with Apple & Cabbage Slaw hits it on the head! …
Lets keep this Super Bowl Eats Week going! I started it out with dessert, my sinfully delicious S’mores Cookies! No exaggeration here on how good they are… to quote two friends that made them today on a very snowy day… “Wholly wow woman!!!!” and “perfect, perfect, perfect snow day cookie!!!”. This makes me smile, so if you haven’t yet checked out the recipe, what are you waiting for?
Now, Pan Fried Pork Dumplings, one of my very favorite picky foods! Crisp and tender wonton stuffed with a mixture of ground pork, shredded cabbage and carrots, garlic, scallion, sesame oil and soy sauce. I will tell you, these are a bit time consuming but you can make them ahead of time and then warm them up on the day of the big game! A flavorful dipping sauce on the side and these are a perfect crowd pleaser!
A little trick for you… the key to getting these to come out well is a good non stick pan and some neutral oil, like canola or vegetable oil. The wontons want to stick so make sure that doesn’t happen and you end up looking like a pro! …
