Turkey Pot Pie
If you’ve been following along then you know I had roasted a whole turkey breast and made a couple dishes with it, a Turkey Ranch BLT and Turkey, Broccoli & Wild Rice Casserole. Even after these two fabulous dishes I still had more meat to use up! Yup an 8 lb turkey breast was going a long way! Over the weekend I had decided to use the rest in one of my favorite comfort dishes, Pot Pie. Warm The Soul :: Chili
High of 71 degrees today, oh thank the lords! I am a giant grump in the heat and I am thrilled to have perfectly warm days and cool nights! One of my very favorite, if not absolute favorite, warm the belly comfort foods is easily chili! My favorite way to eat it… get ready for this… oh and don’t dismiss me as a crazy loon for it…. but I serve my chili over SPAGHETTI with a heaping pile of shredded cheddar on top!!! I saw one of those traveling shows on Food Network and this place did just chili and served it over pasta, my thought immediately was YUM! Maybe you’re thinking, Yup this chick is off her rocker, but seriously don’t knock it till ya try it! Just think of it as a whole new version of bolognese!

Funfetti Apple Cake with Brown Sugar Crumb Topping
I know, you’re thinking what, Funfetti Apple Cake with Brown Sugar Topping?!?!? So where in the world did I come up with this one?? Well, as you may know I have an addiction to Pinterest and all over the site are these fun things done with boxed cake mix. So, I wanted to think of something to do with Funfetti and maybe a hint of Fall in there!
I ran through tons of ideas and heres what I came up, and it came out great… Funfetti box mix with sautéed cinnamon apples with a fantastic brown sugar crumb topping!!
Funfetti Apple Cake with Brown Sugar Crumb Topping
1 box Funfetti cake mix
3 apples, peeled & diced
1 Tbsp plus 2 tsp cinnamon, divided
1 3/4 stick butter, divided
1/2 tsp vanilla
1/4 cup freshly squeezed orange juice
1/4 tsp freshly grated nutmeg
3/4 cup water
1 1/4 cup brown sugar, divided
pinch salt
3 eggs
3/4 cup flour
Oven at 350 degrees.
Lets start with the sautéed cinnamon apples. In a pan stir together the apples, 1/2 stick butter, 1 Tbsp cinnamon, vanilla, orange juice, nutmeg, 1/4 cup brown sugar and a pinch of salt. Cook on medium until the apples have started to soften. About 5 minutes. Stir in the water and let it simmer for another 5 minutes, the liquid part will have thickened slightly. Allow the mixture to cool completely.
While the apples are cooling you can go ahead and start putting together the brown sugar crumb topping. This isn’t a very crumbly topping, it has a slightly gooeyness too it and its fabulous! Into a food processor pulse the flour, 1 cup brown sugar, 1 1/4 stick softened butter and 2 tsp cinnamon. The consistency you are looking for is somewhere between crumbly and sticky (boy do I hope that makes sense to you). Lets be honest, either way it will taste delish, the texture may differ slightly, no big deal!
Now for the cake. In a bowl, add the Funfetti cake mix, eggs and the cooled apple mixture. Mix until well combined. Pour the cake into a buttered 8×8 pan. Top with the crumble and bake for 35-45 minutes.
The crumble topping will be slightly browned and a toothpick should come out clean when poked through. Once the cake is cooled, sprinkle with powdered sugar.
