Truth, I am on a pie kick! Lets be honest, there isn’t anything more American then Apple Pie! No that overly sweet, goopey, mush pie… I’m talking homemade crust, tons of apples piled high and baked to golden perfection! Apple Cinnamon Ice Cream

I’ve got a very yummy sweet treat for ya today! I don’t care that it isn’t 90 degrees out anymore, I am a sucker for ice cream! I happened to have come cream and apples that needed to be used so I figured Jack and I could make some ice cream. I used to make ice cream often but honestly the last time I used the ice cream maker was after I smuggled some Amalfi Coast lemons home from Italy in July of 2008! Let me tell ya, that was the most AMAZING lemon sorbet ever!!! There is nothing like those lemons!
So, back to the ice cream… this one is full of tender sweet cinnamon apples from a local orchard. One of my absolute favorite things about Fall is going apple picking and every year I end up with probably more then I really needed! No problem, this forces you to think of new things to do with them and I think thats a good thing
. There are so many things to do with apples, here are a few ideas… Roasted Pork Loin with Homemade Rosemary Applesauce, Apple Cinnamon Muffins, Funfetti Apple Cake with Brown Sugar Crumb Topping, Not Your Ordinary Turkey Panini, Apple Cornbread Stuffed Pork Chop… ok so there are more so be sure to search the archives for even more apple recipes!

Apple Cinnamon Ice Cream
 
2 apples, peeled and small dice
1 1/2 Tbsp butter
2 tsp cinnamon
2 cups milk
3/4 cups sugar
2 cups heavy cream
2 tsp vanilla

*Ice cream maker insert must be frozen solid*

Its very important that you make the apples first, they will need to cool completely. In a sauté pan, over medium low heat, add the butter and diced apples. Stir in the cinnamon and cook for approx 10 minutes, until the apples are slightly softened. Cool completely!

In a bowl, using a hand mixer, mix the milk and sugar until the sugar is dissolved, a couple minutes.

Using a spoon, stir in the cream and vanilla. With the ice cream maker on slowly pour in the mixture. Allow it to run for about 20 minutes or until it has slightly thickened.

Keeping the ice cream maker on, slowly add in the apples. Allow the ice cream to churn for an additional 10-15 minutes or until the consistency resembles a starting to melt soft serve ice cream.

At this point the ice cream will appear a little bit loose. Shut off the ice cream maker and spoon the ice cream into an air tight container and place it in the freezer. This will allow it to harden and then you can go ahead and scoop away!

Apple Cinnamon Muffins
Happy Friday!!! Before you jump into the weekend make these! YUMMM!! Perfect for a quick grab and go breakfast! Ok don’t laugh but i’m going to tell you a funny story about these muffins. Mom brain as I call it sometimes gets the best of me and well what can I do but laugh at myself.  So, I tell Jack we’re going to bake a batch of fabulous apple cinnamon muffins. I proceed to peel and dice the apples then move to the fridge to get the butter out so I can sauté them briefly to soften them up. Voila, all that left is a Tbsp, certainly not enough to make a batch of muffins. Dilemma, Ryan (18 months) is napping and I honestly don’t feel like going back to the store again. I of course will not waste these lovely apples so I use the little butter I have, throw in some brown sugar and cinnamon and sauté the apples. Ok so I obviously got to the store and picked up butter to finally got to make up some muffins! They came out, in Jacks words, “these are delicious”… Jack is 3 and is of course always right!

Funfetti Apple Cake with Brown Sugar Crumb Topping
 I know, you’re thinking what, Funfetti Apple Cake with Brown Sugar Topping?!?!? So where in the world did I come up with this one?? Well, as you may know I have an addiction to Pinterest and all over the site are these fun things done with boxed cake mix. So, I wanted to think of something to do with Funfetti and maybe a hint of Fall in there!
I ran through tons of ideas and heres what I came up, and it came out great… Funfetti box mix with sautéed cinnamon apples with a fantastic brown sugar crumb topping!!
Funfetti Apple Cake with Brown Sugar Crumb Topping
 
1 box Funfetti cake mix
3 apples, peeled & diced
1 Tbsp plus 2 tsp cinnamon, divided
1 3/4 stick butter, divided
1/2 tsp vanilla
1/4 cup freshly squeezed orange juice
1/4 tsp freshly grated nutmeg
3/4 cup water
1 1/4 cup brown sugar, divided
pinch salt
3 eggs
3/4 cup flour
Oven at 350 degrees.
Lets start with the sautéed cinnamon apples. In a pan stir together the apples, 1/2 stick butter, 1 Tbsp cinnamon, vanilla, orange juice, nutmeg, 1/4 cup brown sugar and a pinch of salt. Cook on medium until the apples have started to soften. About 5 minutes. Stir in the water and let it simmer for another 5 minutes, the liquid part will have thickened slightly. Allow the mixture to cool completely.

While the apples are cooling you can go ahead and start putting together the brown sugar crumb topping. This isn’t a very crumbly topping, it has a slightly gooeyness too it and its fabulous! Into a food processor pulse the flour, 1 cup brown sugar, 1 1/4 stick softened butter and 2 tsp cinnamon. The consistency you are looking for is somewhere between crumbly and sticky (boy do I hope that makes sense to you). Lets be honest, either way it will taste delish, the texture may differ slightly, no big deal!

Now for the cake.  In a bowl, add the Funfetti cake mix, eggs and the cooled apple mixture. Mix until well combined. Pour the cake into a buttered 8×8 pan. Top with the crumble and bake for 35-45 minutes.
The crumble topping will be slightly browned and a toothpick should come out clean when poked through. Once the cake is cooled, sprinkle with powdered sugar.

Lets keep going with quick and delicious meals shall we! This one requires almost no cooking and the flavor combination is out of this world! I mean c’mon can you really go wrong with creamy brie and herb spread, turkey, crunchy tart granny smith apples and the show stopper caramelized onions! Its fine if you just salivated a little! This panini was ooey gooey perfection!
There is something addicting about caramelized onions! The mild and sweetness of the onions adds such incredible flavor to this panini.. you can tell i’m a fan since I use up nearly 2 onions for just 2 sandwiches!
