Yes, everyone loves a good ole ham and cheese sandwich but I think we can improve it a bit- Turkey, Ham & Cheese Crescents . I came up with this one while attempting to think of new lunch ideas for my crazy little boys…. Aren’t they adorable?!?!?! So what did I do to fancy up the traditional ham and cheese??? Well, I wrapped up turkey, ham and cheese in crescent rolls of course! I mean really, crescent rolls make everything better! No worries though, these aren’t just for the kiddos! These are perfect as a party picky too!!!! Try them out this weekend or at your next casual get together.
Remember that roasted turkey I used for the Turkey, Broccoli & Wild Rice Casserole? Well lets make some more use out of it shall we (and no worries, this works with leftover chicken too!). Even after the casserole and sandwich I still have a little left… i’m thinking turkey pot pie to finish it up! Today, this beauty of a sandwich! Turkey BLT! I have a love of bacon, especially in a sandwich. I wanted to throw together a quick meal using leftover meat again and let me tell ya, this is a yummy one!!! Flavorful roast turkey, salty crunchy bacon, tomatoes, spring mix greens and ranch dressing, doesn’t get much easier!

Fresh mozzarella, sweet roasted peppers, tomatoes, basil, spring mix… then throw a drizzle of balsamic drizzle, and WOW!!! Burst of flavor in your mouth!!!
Caprese Salad Wrap
makes 3 wraps
3 spinach & pesto wraps
1/2 lb fresh mozzarella, sliced thin
2 tomatoes, sliced thin
a few roasted peppers, thin strips
1/2 cup balsamic vinegar
To get a really nice drizzle of balsamic, the vinegar needs to be reduced down. Add the vinegar to a small pot over low heat. Simmer for about 15-20 minutes until the vinegar has reduced by half.
Sprinkle the mozzarella, tomatoes and roasted peppers with salt, pepper and a little olive oil.
Place a wrap onto a cutting board. Keeping everything to one side of the wrap, layer the spring mix, tomatoes, mozzarella, roasted peppers, basil and a drizzle of the reduced balsamic.
Fold over the closest edge then tuck in the sides. Go ahead and roll it up the rest of the way.
Sliced on a diagonal & served with Terra vegetable chips (I’m in love with these chips)!

Lets keep going with quick and delicious meals shall we! This one requires almost no cooking and the flavor combination is out of this world! I mean c’mon can you really go wrong with creamy brie and herb spread, turkey, crunchy tart granny smith apples and the show stopper caramelized onions! Its fine if you just salivated a little! This panini was ooey gooey perfection!
There is something addicting about caramelized onions! The mild and sweetness of the onions adds such incredible flavor to this panini.. you can tell i’m a fan since I use up nearly 2 onions for just 2 sandwiches!
