Today I’m sharing a dish that I absolutely love for any meal of the day. It is hearty, easy and so delicious, it is the Mexican dish known as Huevos Rancheros! I love everything about this dish, each layer adding incredible flavor. Starting with a warmed corn tortilla, topped with homemade refried beans, guacamole, a perfectly cooked fried egg, a little sour cream and queso fresco. Cilantro finishes this dish off, and I know its not for everyone but I love cilantro and can’t get enough of it. While the weather here in NJ has been cool and rainy for DAYS now but Mothers Day is this weekend and it should be filled with bright and wonderful things!
