Fresh Fruit Salsa with Lime & Honey…. doesn’t that just get the mouth watering?! While the weather here in NJ has been cool and rainy for DAYS now but Mothers Day is this weekend and it should be filled with bright and wonderful things! I made this the other day and it is fabulous and so simple! This would make for a fantastic appetizer or addition to the dessert table. Oh and if there happens to be any left over, it makes for a great smoothie along with baby spinach and celery {I had it this morning, YUM!}.
So whats in this beautiful fruit salsa? Strawberries, granny smith apples, mango, lime and honey. Yup thats it! I found cinnamon sugar pita chips to serve along side and it was a big hit. Another great use of this salsa… a pancake topping, its so so good! The day after you make this and let it sit in the fridge, between the natural fruit juices, honey and lime juice a delicious light syrup is created and it really is perfect on pancakes or waffles too!
- zest plus juice of 1 lime
- 2 tsp honey {local is best if you can find it}
- 1 mango, fine dice
- 1 lb strawberries, fine dice
- 1 granny smith apple, fine dice
- cinnamon sugar pita chips
- Whisk together the lime juice, zest and honey.
- Add in the diced fruit and stir to coat.
- Serve with the pita chips.
