What happened to December?! I can’t believe that Christmas and New Years are just around the corner already. I don’t know about you all but I have been running around like crazy the last couple weeks to get everything ready! Heres the thing… dinner… it sometimes can be time consuming but I am determined to stay away from fast food and still get a homemade dinner on the table for my family. So today I am here to tell you that “Yes You CAN“… yes you can go gift shopping, yes you can get errands run, yes you can cook up a quick meal, yes it can be delicious, hearty and easy! This Skillet Tortellini & Meatballs comes together all in one skillet, has great fresh flavor thanks to a quick and easy sauce made from Hunt’s Tomatoes.
I ran to Walmart the other day to grab some more wrapping paper and figured I’d see what I could grab to throw together for dinner that night and I thought lets go easy Italian. I thought PAM Cooking Spray would be perfect to help with a skillet meal, cooking up those meatballs without tons of oil is a huge bonus! Then Hunt’s Tomatoes, they are perfect to help out with making a great fast dinner! I used the Petite Diced Flash Steamed tomatoes and they were just so perfect! The flavor of the tomato is so bright and fresh! A few other ingredients- garlic, onion & basil {all right at Walmart too!} and “Yes You CAN” easily make a dinner that the whole family will LOVE! I grabbed some little rolls as well, because hey you’ve got to soak up the extra sauce with some bread am I right?!?
I will say, make sure to use a nice big skillet to get everything in there. Doing everything from making the meatballs to cooking the sauce and the pasta all in one pan not only makes dinner easy but clean up too! I made the meatballs just as I normally would but made them bite size and they just work perfect for this meal. Browned in the pan with the help of PAM non stick cooking spray then set aside to make the sauce. Once the sauce simmers for a bit you go ahead and toss in the tortellini, which cook very quickly, then add the meatballs back in. Simmer just a few extra minutes, shut the heat, sprinkle with grated cheese and fresh parsley. Bring the whole skillet to the table and you are ready to serve!
I am really loving the flash steamed Hunt’s tomatoes!!! The tomatoes really keep that bright, fresh flavor as though you made the sauce using a fresh tomato from the garden. In my opinion, this sauce doesn’t need to cook long because of the quality of the tomato and this is really what makes this meal a “Yes You CAN” dinner! This Skillet Tortellini & Meatballs is delicious and lets you put a GREAT meal on the table in a short amount of time!
- 2 can Petite Diced Hunt’s Tomatoes
- 20 oz fresh cheese tortellini
- 1/2 a red onion, small dice
- 4 garlic cloves, rough chop
- a few leaves of fresh basil
- 1 lb ground beef
- 2 eggs
- 1/4 cup grated cheese {plus extra for serving}
- 1/2 cup Italian seasoned breadcrumbs
- 1 tsp garlic powder
- 1 tsp salt
- pepper
- freshly chopped parsley for garnish
- PAM non stick cooking spray
- In a large bowl mix together the ground beef, eggs, grated cheese, breadcrumbs, garlic powder, salt and a little pepper. Form into bite sized meatballs.
- Heat a LARGE skillet over medium high heat. Spray generously with PAM non stick cooking spray. Place the meatballs in the pan and brown on each side. Place on a dish to the side.
- To the pan, give another spray of oil and add in the garlic and onion. Cook a few minutes until softened. Stir in the tomatoes, basil and a little salt and pepper. Simmer the sauce for 20 minutes.
- Add in the pasta and cook for about 5 minutes, stirring occasionally. Add the meatballs back in the skillet and cook another 3-4 minutes until the pasta is cooked through, again stirring occasionally.
- Garnish with grated cheese and some fresh chopped parsley.
