We are in full on holiday mode and I love it! While menu planning, prepping the house, decorating, and all the kids stuff… well we are BUSY! I never want to cave into an unhealthy meal simply because we are busy and I love that I don’t have to with the awesomeness that is MorningStar Farms Spicy Black Bean Burger!! The veggie cuisine burgers make my life so much easier; they only take minutes to throw prepare and I get to feel good about what I’m eating. Its win win all around with these Spicy Black Bean Burger with Cilantro Garlic Mayo.
My little guy and I ran to Target the other day to pick up some fun stuff for his school Thanksgiving Feast and I of course had dinner on the mind. I picked up a couple boxes of the MorningStar Farms Spicy Black Bean Burger for myself and Steve. I gave myself a little pat on the back because I could throw dinner together in 15 minutes and loved that it is super healthy! Between errands and karate, there was no time for cooking.
My hubby, well he’s a meat lover and guess what… he loved these! They are packed with GREAT flavor, protein and low in calories. These are great on their own so I didn’t have to do much to make a meal. I decided to skip the bun and use Boston lettuce instead. Some thick slices of tomato and sliced avocado add a perfect freshness to the dish. To finish it off I threw together a quick cilantro garlic mayo. All of the flavors of this one work so perfectly with the MorningStar Farms Spicy Black Bean Burger.
So to put this together, follow the instructions to thaw the burgers. In a non stick skillet brown the Spicy Black Bean Burgers on both sides. Layer a couple leaves of Boston lettuce on the bottom, a slice of tomato, sliced avocado and the burger. That mayo is so easy! I used a light mayo mixed with garlic powder, cracked pepper, lime juice and lots of fresh chopped cilantro. You all are going to love this burger!
- 1 box MorningStar Farms Spicy Black Bean Burgers
- 1/4 cup light mayo
- 1/2 tsp garlic powder
- 1/2 tsp fresh squeezed lime juice
- cracked pepper
- fresh chopped cilantro
- sliced tomato
- sliced avocado
- Boston lettuce
- Thaw the burgers according to the Morning Star Farms instructions. Then over medium low heat, brown the burgers in a non stick skillet.
- Stir together the mayo, lime juice, garlic powder, pepper {to taste} and a palm full of chopped cilantro.
- Layer the burger using the lettuce in place of a bun. A slice of tomato, some avocado, the black bean burger and finished with the cilantro mayo and some extra cilantro leaves if you love cilantro as much as I do.
