Fall is here and that means APPLES!!! We are so fortunate to have an abundance of local apple orchards to go picking for the freshest apples. I love going picking with the kids, coming home with bags of apples and then coming up with ways, sweet & savory, to use them. I decided on these Apple Pie Burritos, they are simple and delicious! Unlike a traditional apple pie, you can take these Apple Pie Burritos on the go, no utensils needed. Flaky, crisp phyllo dough wrapped around a simple apple filling.
Have you ever used phyllo dough? It can be a bit of a pain to work with but it is so so good!! Its very thin so you use several at a time and that gives you layers of flaky goodness. It is light, crisp and just perfect for this quick and easy dessert recipe. The filling is simple; apples, vanilla, cinnamon, flour, sugar and hazelnuts. You can leave the nuts out of course but I do love the crunch that they add. Walnuts would be great here as well. Or if you can’t do nuts, raisins would make a nice addition as well. These are rolled just like a burrito, hence my naming it as such, and then brushed with melted butter and baked until perfectly golden. Serve warm with powdered sugar, ice cream or whipped cream. {These re heat well too, so yo can make them ahead of time then pop them in the oven to rewarm}
- 5 apples, peeled, small dice
- 1 tsp vanilla
- 1 1/2 tsp cinnamon
- 3 Tbsp flour
- 2 Tbsp sugar
- 1/3 cup chopped hazelnuts {optional}
- 1 pkg phyllo dough {two rolls}
- 6 Tbsp melted butter
- Preheat your oven to 350 degrees.
- In a large bowl stir together the apples, vanilla, cinnamon, flour, sugar and hazelnuts.
- Open just one roll at a time. Remove approx. 5-6 sheets of the phyllo and place onto a clean surface. ***Cover the remaining dough with a lightly dampened towel to prevent drying and cracking.
- Add a couple of spoonfuls onto the dough near one side of the shorter end of the dough {see images about}. Flip the short side of the dough over the filling. Fold in the sides just slightly and roll the dough to the end. Brush a bit of the melted butter at the end of the dough to seal it shut. Place onto a lined baking sheet.
- Repeat with the remaining dough. You should get 4 per roll of dough for a total of 8 apple pie burritos.
- Brush all the burritos with the melted butter and pop into the oven for approx. 45 minutes.
