Somedays the most simple of meals are absolute perfection. I could have this Mediterranean Platter for Two as a meal once a week! There is something wonderful about popping open a bottle of wine, eating a very casual and delicious array of Mediterranean goodies while enjoying the good conversation with someone you love! Its easy, fun, delicious!
Heres the thing, really you can do a million versions of this meal, its all about making it whatever your tastes are and what you love. I’ve used some of my favorites here, hummus with toasted pita, artichoke hearts, roasted peppers, sweet soppresata, sliced tomatoes and my fantastic Tuscan Olive Salad. Arrange everything onto a big platter or as I did, a wooden cutting board and enjoy!
