Today I’m back with this bowl of goodness! I’m going to be making these for Thanksgiving this year! Sour Cream, Scallion & Bacon Mashed Potatoes! Awesome flavors, period!
I used yukon gold potatoes for these, they are my favorite! Cooked until for tender then mixed with a little vegetable broth, light sour cream, tons of sliced scallions and crisp bacon! Seasoned with salt and pepper to taste and thats it! The sour cream adds a really nice creaminess and a mild tang. The flavor combination with the scallion and crisp salty bacon is really wonderful! Basically these are as awesome as a loaded baked potato {without cheese}!
