The weekends have been absolutely crazy lately. There seems to be something nearly every Saturday and Sunday, mostly fun stuff so i’m not complaining. All this running around has made our tradition of family football Sundays with my parents and brothers a bit tough. Weeks into the season and it was just this past Sunday that we finally got together with a delicious spread of snacks, a friendly game of football in the yard with all the boys and some pudding pie to end the night. On the menu, these crisp, sticky delicious baked Teriyaki Pineapple Wings!
I am a wing lover! What I don’t love is the mess of frying wings in the house. Baking the wings takes out a lot of the work and just about all the mess. The wings are first tossed lightly with olive oil, salt and pepper. Baked in the oven for about 40-45 minutes flipping the wings over once, halfway through the cooking time to crisp up each side.
The sauce is super easy and I like it because its a little different then asian type wings i’ve had out. A mix of teriyaki sauce, ketchup, crushed pineapple, garlic, brown sugar, crushed red pepper and a little water. Blend everything then simmer until thickened. Once the wings are done baking, toss them in the sauce and a simple garnish of toasted sesame seeds and sliced scallion.
