Is that not a delicious looking burger or what?!?!?! One of my very favorite salads in the summer is a caprese salad; juicy Jersey tomatoes, creamy fresh mozzarella and lots and lots of basil! With all the snow and frigid weather we’ve been dealing with here in Jersey, summer time warm weather feels a million days away! Thankfully we can fake it in the kitchen with some bright colored, summer inspired food.
This Caprese Chicken Burger hits the spot! Juicy chicken burger seasoned with tons of basil and garlic sitting on a toasted bun with fresh arugula, topped with fresh mozzarella and a couple fat slices of tomato. I drizzled balsamic vinegar on the bottom of the bun to add a nice punch of flavor as well, super good! This beautiful burger deserves a nice glass on wine on the side; this is NOT a beer & burger kinda burger.

Teriyaki Chicken Burger with Asian Slaw
Amazing {Italian inspired} Chicken Burger
- 1 lb lean ground chicken
- a handful of fresh basil, rough chopped
- 3 garlic cloves, finely minced
- 2 thick slices of fresh mozzarella
- tomato, sliced
- balsamic vinegar
- arugula
- 2 buns, toasted
- olive oil
- salt & pepper
- Add the ground chicken, fresh basil and garlic to a bowl. Season with salt and pepper and mix to combine the ingredients. Form into 2 patties.
- Heat a large sauté pan over medium high heat. Drizzle a little olive oil in the pan to proven sticking.
- Cook the burgers about 5 minutes per side. The cooking time will vary depending on the thickness of the patty. If you aren’t sure of the doneness by touch, simply cut a small slit in the center to check to be sure the meat is cooked through.
- Just a minute before the burgers are done, top each with a slice of fresh mozzarella, season again lightly with salt and pepper, place a lid on just to melt the cheese. Remove from the pan.
- Have your bun toasted. Drizzle the bottom of the bun with a bit of balsamic vinegar. Add the arugula on top of the bun, the chicken patty, then the sliced tomatoes. You can add another drizzle of vinegar to the top of the bun if you love vinegar as much as me.
