Whats a snickerdoodle? Its simply a sugar cookie rolled in cinnamon and sugar prior to baking. Friday night my brothers and sister in law came by for dinner. I was feeling festive so we had a baked ham, mashed potatoes & roasted veggies. So good! But, what would a family get together be without dessert? Jen and I decided on Snickerdoodles! My youngest brother makes fun of me because I really like soft cakey cookies with a slightly crisp edge. My basic soft sugar cookie recipe is perfect for these, seriously one of my favorite cookie recipes and they come out perfect every time! Pour yourself a glass of milk and dunk away!
Snickerdoodle Cookies
makes about 28 small cookies
2 1/2 cups flour
(can sub 1 cup whole wheat flour plus 1 1/2 cups AP flour)
1 1/2 tsp baking powder
1/4 tsp salt
1 1/2 sticks butter, room temp
1 egg
3/4 cup sugar
2 Tbsp water
1 tsp vanilla
Cinnamon Sugar Mixture:
1/4 cup sugar
1 Tbsp ground cinnamon
Oven at 350 degrees.
In a small bowl mix together the cinnamon sugar mixture and set aside.
In a small bowl mix together the flour, baking powder and salt.
In a large bowl, using an electric hand mixer, cream the butter until smooth. Add in the sugar and mix until well combined.
Next add in the egg, vanilla and water and mix until light and fluffy.
Add in half the dry ingredients and mix until just combined. Repeat with the remaining dry ingredients. Be sure not to over mix. You want the dough just combined, use a wooden spoon to incorporate any flour that didn’t get in there.
Using a small scoop to keep things even, scoop the dough and roll in the cinnamon sugar mixture. Place the cookie rounds out onto a parchment lined cookie sheet and push down just slightly.
Bake for for 10-12 minutes or until the very outer edge is lightly golden.
