These Chicken & Spinach Rollups a great quick and good for you meal! Today was a school day for Jack. Today that meant drop off at 8am, quick stop with Ry at Panera for some coffee, Kohls for some Christmas stuff then the grocery store. By time I got home and put the groceries away it was time to get back in the car to pick Jack up from school. Amazing how quickly 3 hours goes by while running around. Then there was lunch time, nap time and time to put Avon orders together.
This Chicken Fajita Wrap may not be served on a sizzling platter but it is so good! The chicken is juicy and full of flavor, the peppers and onions are sweet and the sharp cheddar cheese, all making this a delicious wrap! No need to use a store bought taco seasoning that is likely full of salt and whatnot, its too easy to make your own! A handful of ingredients that punch a ton of flavor! Perfect take to work lunch or dinner.

Fresh mozzarella, sweet roasted peppers, tomatoes, basil, spring mix… then throw a drizzle of balsamic drizzle, and WOW!!! Burst of flavor in your mouth!!!
Caprese Salad Wrap
makes 3 wraps
3 spinach & pesto wraps
1/2 lb fresh mozzarella, sliced thin
2 tomatoes, sliced thin
a few roasted peppers, thin strips
1/2 cup balsamic vinegar
To get a really nice drizzle of balsamic, the vinegar needs to be reduced down. Add the vinegar to a small pot over low heat. Simmer for about 15-20 minutes until the vinegar has reduced by half.
Sprinkle the mozzarella, tomatoes and roasted peppers with salt, pepper and a little olive oil.
Place a wrap onto a cutting board. Keeping everything to one side of the wrap, layer the spring mix, tomatoes, mozzarella, roasted peppers, basil and a drizzle of the reduced balsamic.
Fold over the closest edge then tuck in the sides. Go ahead and roll it up the rest of the way.
Sliced on a diagonal & served with Terra vegetable chips (I’m in love with these chips)!
